As a child, I hated beans. I remember my mom making a 14 bean soup and believing that “dirty sludge” was a special kind of torture made just for me. I avoided them for much of my adulthood. When I first tasted this version my opinion completely changed. They are delicious, healthy and can pack a ton of punch in the flavor department when cooked in this style. Use these beans to make a great soup, bean dip, or as a base for veggie cassoulet.
