As cooks, and I would argue as humans, if we consume animals we should attempt to consume and use every single part of them. By doing so we give thanks for the nourishment, warmth and health they provide us. All animal “parts” go somewhere and for this recipe, it took me to Chinatown and after the chopping and simmering: Improved gut health, Eased joint pain, Boosted my immune system, Strengthened bones, Promoted sleep.
