Vegetarian Entrees can often be an afterthought. This dish was born from my desire to make a dish that was so compelling that anyone would happily order it, not just the vegetarians. Utilizing umami from mushrooms and smoked paprika to get some smokiness there is some real depth of flavor here. When my husband, a huge carnivore, gave it the thumbs up I knew I had a big winner.
